Enjoying a homemade vegan lemon bar, a testament to simple, wholesome ingredients.

These vegan lemon bars are more than just a dessert; they are a celebration of vibrant flavors and accessible baking. We’ve meticulously crafted this recipe to ensure it’s not only incredibly delicious but also straightforward and hassle-free, using readily available ingredients found in most pantries. You don’t need to be an experienced baker to achieve perfect results every time.

What sets these vegan lemon bars apart is their harmonious balance of textures and tastes. The base is a delightfully **lemony shortcrust pastry** – rich, buttery (without any dairy!), and just crumbly enough to melt in your mouth. This foundation provides a wonderful contrast to the star of the show: a luscious, creamy, and irresistibly tangy **vegan lemon curd**. This curd is so good, it’s truly finger-licking! Its bright, zesty notes are perfectly complemented by a subtle sweetness, making each bite an invigorating experience.

Beyond their exquisite taste, these vegan lemon bars offer a visually appealing dessert. Their sunny yellow hue brings a splash of color to any table, making them a joyful addition to your dessert repertoire. Whether you’re adhering to a plant-based diet, have dietary restrictions, or simply love a good lemon dessert, these bars are a fantastic option that will surprise and impress everyone with their light crust and unforgettable lemon filling. They prove that vegan baking can be utterly decadent and incredibly simple.

Ingredients and Clever Substitutions

Crafting these delicious vegan lemon bars is a breeze, thanks to a thoughtful selection of plant-based ingredients. Below, we break down each component, offering insights into its role and potential substitutions to ensure your baking journey is smooth and successful.

For the Vegan Shortcrust Pastry

Essential ingredients for a perfect vegan pie crust, including flour, sugar, oil, and lemon zest.
Simple ingredients combine to form the foundational crust.
  • All-Purpose Flour: This forms the structure of our crumbly crust. For a slightly healthier or more rustic twist, you can use a 50/50 blend of all-purpose flour and whole wheat flour. Gluten-free 1:1 baking flour can also be used, but results may vary slightly in texture.
  • Sugar: White granulated sugar is standard for a clean taste, but brown sugar can add a hint of molasses and moisture, contributing to a chewier crust. Ensure your sugar is vegan, as some white sugars are processed with bone char.
  • Neutral Vegetable Oil: We recommend using a neutral-flavored oil like sunflower seed oil, canola oil, or light olive oil. These oils provide the necessary fat for a tender crust without imparting a strong flavor that would compete with the lemon. Melted vegan butter is also an excellent substitute for an even richer taste.
  • Lemon Zest: The grated zest of one lemon infuses the crust with a bright, aromatic lemon essence, enhancing the overall citrus profile of the bars. Always zest your lemons before juicing them!
  • Baking Powder: Just a tiny amount is added to the crust to give it a lighter, more friable (crumbly) texture. It helps prevent the crust from becoming too dense or tough.

For the Irresistible Vegan Lemon Curd

Ingredients for creamy vegan lemon curd, featuring fresh lemons, plant milk, cornstarch, and turmeric for color.
The vibrant components of our dairy-free lemon curd.
  • Plant Milk: The base for our rich, creamy curd. Any unsweetened plant milk will work beautifully – oat milk, soy milk, almond milk, coconut milk (from a carton, not canned for a neutral flavor), or rice milk are all excellent choices.
  • Sugar: Granulated sugar is used here to provide sweetness and balance the tartness of the lemons. Adjust to your preference, but keep in mind that lemon curd is meant to be a delightful interplay of sweet and sour.
  • Cornstarch: This is the crucial thickening agent for our lemon curd, creating that silky-smooth, luscious texture without eggs. Do not skip this! Arrowroot powder can be used as a substitute, but cornstarch generally yields a glossier finish.
  • Fresh Lemons: You’ll need both lemon juice and lemon peel for maximum lemon flavor. We highly recommend using organic lemons, especially since you’ll be utilizing the peel. Ensure your lemons are ripe for the best flavor and juiciness.
  • Turmeric: This spice is added purely for its beautiful yellow color, mimicking the traditional appearance of lemon curd. Don’t worry, you won’t taste it! It provides a warm, inviting hue without altering the flavor profile.

Step-by-Step Instructions for Perfect Vegan Lemon Bars

Follow these detailed instructions to create stunning vegan lemon bars that are sure to impress. Each step is designed for clarity and ease, ensuring a successful baking experience.

Crafting the Vegan Shortcrust Pastry

The foundation of our lemon bars is a simple yet flavorful shortcrust pastry. Getting this right is key to the overall texture.

  1. Preheat your oven to **350°F (180°C)**. This ensures the oven is at the correct temperature for even baking from the start.
  2. Prepare your baking pan: Line a 10×10-inch (25×25 cm) square baking pan with **parchment paper**. If you’re using a round 10-inch (26 cm) diameter pan, that’s perfectly fine too. The trick is to leave enough parchment paper overhanging the edges of the pan. These “handles” will make it incredibly easy to lift the entire baked pie out later.
  3. In a medium-sized mixing bowl, combine the wet ingredients for the crust. Add ¼ cup (50 grams) of **sugar**, 3 tablespoons (45 grams) of **water**, 3 tablespoons (40 grams) of neutral **vegetable oil**, and the aromatic grated zest of one fresh **lemon**.
  4. Combining wet ingredients for the vegan lemon bar crust in a bowl.
The initial blend of wet ingredients, infused with lemon zest.
  5. Using a spatula, mix these ingredients together until well combined.
  6. Now, sift in the dry ingredients: add 1⅓ cups (200 grams) of **all-purpose flour** and 1 teaspoon (5 grams) of **baking powder** into the bowl with the wet mixture. Sifting helps prevent lumps and ensures an even distribution.
  7. Sifting dry ingredients – flour and baking powder – into the bowl for the crust.
Adding the flour and baking powder for the crust.
  8. Continue mixing with the spatula until the flour has absorbed most of the liquids and a shaggy dough begins to form.
  9. Switch to your hands and gently **knead the dough for just about one minute**. The goal here is simply to bring the ingredients together, not to develop the gluten. Over-kneading will result in a tough, less crumbly crust, which is not what we want for these delicate lemon bars. You can easily do this right in the mixing bowl.
  10. The dough for the vegan pie crust after light kneading, ready for the baking pan.
Gently combine the ingredients into a soft dough.
  11. Transfer the dough into your prepared baking pan. Using your hands, **press and compress the dough evenly** across the bottom of the pan to form a compact, flat base layer. Make sure there are no gaps and the dough adheres well to itself.
  12. The vegan pie crust pressed firmly into the lined baking tray, ready for a quick bake.
Evenly press the dough into the pan for a uniform crust.
  13. Using a fork, **prick holes all over the dough**. This prevents the crust from puffing up excessively during baking.
  14. The vegan pie crust with fork holes, awaiting its first bake.
Prick the crust to ensure even baking.
  15. **Bake the crust in the preheated oven at 350°F (180°C) for 15 minutes**.
  16. Once baked, remove the crust from the oven and **let it cool in the pan for about 10 minutes** while you prepare the lemon curd. It’s important not to turn off your oven, as you’ll need it again very soon!

Whipping Up the Zesty Vegan Lemon Curd

While your crust is cooling, let’s create the star of the show: a luscious, dairy-free lemon curd.

  1. The secret to a truly outstanding lemon curd lies in fresh, high-quality lemons, using both their peel and juice. Begin by carefully removing **the peel from one lemon**. Avoid the white pith, as it can be bitter. Add this lemon peel to a medium saucepan.
  2. Lemon peel simmering in a saucepan with other ingredients to infuse flavor.
Infusing the plant milk with fresh lemon peel.
  3. Next, prepare your lemon juice. You’ll need about ⅓ cup (80 grams) of fresh lemon juice. Take 3 medium-sized lemons (you can use the zested lemon from the crust and the peeled lemon from the curd if they were organic), cut them in half, and squeeze out their juice.
  4. **Strain the lemon juice through a fine-mesh sieve** into a small container. This crucial step ensures that your lemon curd will be perfectly smooth, free from any pulp or seeds. Set the filtered juice aside for later.
  5. Squeezing fresh lemons for juice, which will be filtered to ensure a smooth lemon curd.
Freshly squeezed lemon juice is essential for vibrant flavor.
  6. Back to your saucepan: Add 2 cups (500 grams) of your chosen **plant milk** (we enjoy rice milk for its neutral flavor), ½ cup (100 grams) of **sugar** (cane sugar works wonderfully), and ½ cup (60 grams) of **cornstarch**. The cornstarch is vital for thickening the curd to a luxurious consistency.
  7. For that signature sunny yellow color, add a tiny **pinch of turmeric powder**. Remember, this is purely for aesthetic appeal and will not affect the taste.
  8. All the vegan lemon curd ingredients, excluding lemon juice, mixed in a saucepan before cooking.
Whisk together the base ingredients for the lemon curd.
  9. **Whisk the mixture thoroughly** until all the cornstarch lumps have dissolved and the liquid is smooth.
  10. Place the saucepan over **medium heat**, continuously stirring with your whisk. The mixture will gradually begin to thicken. Keep stirring until it reaches a pudding-like consistency.
  11. Once thickened, **remove the lemon peel** from the saucepan.
  12. Immediately **add the reserved filtered lemon juice** to the thickened curd. Continue to whisk for another minute or so, ensuring the lemon juice is fully incorporated and absorbed into the custard. The warmth from the curd will cook the lemon juice slightly, preventing a raw taste. And just like that, you have an absolutely incredible, perfectly smooth vegan lemon curd!

Assembling and Finishing Your Vegan Lemon Bars

The final steps bring together your perfect crust and zesty curd for a truly delightful dessert.

  1. With your baked crust cooled for about 10 minutes, **carefully pour the warm vegan lemon curd evenly over the crust**. Use a spatula to spread it smoothly to the edges, creating a uniform layer.
  2. Smooth vegan lemon curd being poured and spread over the baked pie crust in a baking pan.
Pouring the vibrant lemon curd onto the cooled crust.
  3. Return the pan to the oven and **bake for an additional 15 minutes at 350°F (180°C)**. This final bake helps set the curd and allows the flavors to meld beautifully.
  4. Once baked, remove the pan from the oven. It’s crucial to **let the lemon bars cool completely at room temperature for at least one hour** (or longer) before attempting to remove them from the pan. The curd needs time to firm up as it cools.
  5. The complete vegan lemon square, freshly baked and cooled, ready to be cut into bars.
Freshly baked vegan lemon bars, cooling down.
  6. Once thoroughly cooled, use the parchment paper overhangs to carefully lift the entire slab of lemon bars out of the pan and transfer it to a cutting board.
  7. Using a sharp knife, **cut the large square into smaller, individual squares or bars**. For the cleanest cuts, wipe your knife with a damp cloth between each slice.
  8. **Serve and enjoy!** For an elegant touch, you can dust the tops of the vegan lemon bars with powdered sugar right before serving. However, be aware that the powdered sugar will absorb moisture and dissolve after a few seconds, so apply it just prior to presentation.
  9. Finished vegan lemon bars, dusted with powdered sugar, ready for serving.

Storage Tips for Freshness

To keep your vegan lemon bars tasting their best, proper storage is essential. Here’s how to maintain their delightful texture and flavor:

  • Room Temperature: These lemon bars can be kept at room temperature for about half a day, especially in a cool environment. However, for optimal freshness and to preserve their structure, refrigeration is recommended for longer storage.
  • Refrigerator Storage: To extend their shelf life, store the vegan lemon bars in the refrigerator. Arrange them in a single layer on a plate or in an airtight container. They will stay fresh for up to 2-3 days.
  • Preventing Sogginess: It’s important not to stack the bars directly on top of each other, especially if they’ve been dusted with powdered sugar, as this can cause them to stick together and become soggy. If you must stack them, place a piece of parchment paper between layers.
  • Freezing: For longer storage, you can freeze vegan lemon bars. Wrap individual bars tightly in plastic wrap, then place them in an airtight freezer-safe container or bag. They can be frozen for up to 1 month. Thaw them in the refrigerator overnight before serving.
