This Honey Mustard Dressing is arguably the most versatile dressing you’ll ever create, tasting absolutely terrific on a vast array of dishes. It strikes the perfect balance of sweet, tangy, garlicky, and acidic flavors, boasting a creamy texture that’s ideal for generously drizzling over fresh vegetables and vibrant salads.

Ingredients
- ¼ cup extra virgin olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 2 teaspoons mustard (American or Dijon mustard)
- 1 tablespoon honey (or maple syrup for vegan)
- ½ teaspoon garlic powder
- ½ teaspoon salt (sea salt or kosher salt)
- 2 twists black pepper (freshly ground recommended)
Instructions
BOWL METHOD
- Add all ingredients to a small bowl: extra virgin olive oil, freshly squeezed lemon juice, mustard, honey or maple syrup, garlic powder, salt, and black pepper. Whisk fast for about 1 minute until well combined.
- Continue whisking until they turn into one well-emulsified liquid. Taste and adjust based on your preference.


JAR METHOD
- Add all ingredients to a small jar and close it with a lid: extra virgin olive oil, freshly squeezed lemon juice, mustard, honey or maple syrup, garlic powder, salt, and black pepper.
- Close the jar tightly and shake it vigorously for 30 seconds until the ingredients are well combined and emulsified. Taste and adjust before serving.

TIP: Use this recipe as a guideline and feel free to adjust the amounts of ingredients to suit your personal taste. Some prefer a sweeter flavor, while others might enjoy it more acidic. We find a 2:1 fat-to-acid ratio creates a beautifully balanced dressing, but always taste and adjust!
SUBSTITUTIONS:
- Honey: For a vegan version, substitute 100% pure maple syrup or agave syrup. Maple syrup is slightly less sweet, so you might need to add a bit more.
- Mustard: You can use either American yellow mustard or Dijon mustard. Dijon is typically more pungent and spicier, so you might want to use a bit less initially.
- Garlic powder: If preferred, use about 1/2 clove of fresh grated garlic instead of garlic powder. Note that fresh garlic will offer a stronger flavor and a different texture.
- Lemon juice: Experiment with apple cider vinegar, white wine vinegar, red wine vinegar, or even orange juice as substitutes. Remember that orange juice is sweeter and will change the dressing’s flavor profile.
ADD-INS:
- Fresh herbs: Stir in 1-2 tablespoons of finely chopped fresh parsley, dill, chives, basil, cilantro, or mint for enhanced freshness.
- Dried herbs: Add 1/2 to 1 teaspoon of dried oregano, thyme, mint, dill, or Italian seasoning for a deeper, aromatic touch.
- Spices: For a warm or earthy flavor, consider incorporating 1/2 teaspoon of ground cumin and 1/2 teaspoon of paprika.
MAKE AHEAD & STORAGE:
- Make ahead: This dressing is excellent for meal prep. Prepare it in advance and store. Always whisk or shake well before using.
- Refrigerator: Keep in a sealed jar or airtight container in the fridge for up to one week.
- Freezer: Transfer to a freezer-safe jar or ice cube tray and freeze for up to 6 months.
- Thaw: Defrost in the refrigerator for several hours or briefly in the microwave. Whisk or shake well after thawing.
