Ingredients

  • 8 tablespoons unsalted butter, divided
  • 2 cups diced onion
  • 3/4 cup chopped parsley
  • 1 (28 ounce) can crushed tomatoes
  • 2 teaspoons Italian spice blend
  • 1/2 teaspoons Kosher salt
  • 1/4 teaspoon crushed red pepper
  • 3/4 cup dry sherry
  • 1 cup crumbled feta cheese, divided
  • 4 cloves garlic, minced
  • 2 pounds medium raw shrimp, cleaned, deveined and shelled
  • 1 pound cooked linguine

Instructions

  1. In a large skillet set over medium heat, add 4 tablespoons unsalted butter.
  2. When the butter is melted, add the diced onion and parsley. Cook for about 5 minutes or until the onions are translucent.
  3. Add the tomatoes, Italian spice blend, crushed red pepper, and kosher salt. Lower the heat and let simmer for 20 minutes.
