Delicious Blueberry Crumb Cake with a generous streusel topping, perfect for summer.

My recent obsession with blueberries is completely justified. How can anyone not adore these tiny, vibrant powerhouses? Beyond their delicious taste, blueberries are celebrated as a superfood, packed with health benefits. Research consistently highlights their incredible antioxidant activity, often surpassing that of many other common fruits and vegetables. Just one cup of fresh blueberries provides a mere 81 calories, while delivering a remarkable 30% of your daily recommended vitamin C intake. They are also a great source of vitamin K, manganese, and dietary fiber, contributing to heart health, improved brain function, and digestive wellness. Their natural sweetness makes them a versatile ingredient, perfect for everything from smoothies and salads to, of course, a show-stopping dessert like this crumb cake.

For quite some time, I’ve been eager to try Ina Garten’s (the Barefoot Contessa) famous Blueberry Crumb Cake. Having recently stocked up on these beautiful berries, I decided it was high time to embark on this culinary adventure. The result was nothing short of spectacular. The cake exceeded all expectations, showcasing an incredible depth of flavor that truly sings with every bite. It’s a recipe that marries simplicity with elegance, delivering a homemade dessert that tastes like it came from a gourmet bakery.

What sets this Blueberry Crumb Cake apart is its perfectly balanced profile. The cake itself is wonderfully moist, almost melting in your mouth, infused with a delicate hint of lemon. This subtle citrus note, derived from fresh lemon zest, brightens the overall flavor profile, creating a refreshing contrast to the sweetness of the berries. The blueberries are indeed like little blue jewels, strewn generously throughout the tender, lemony cake, bursting with juicy flavor in every spoonful. Each bite offers a delightful explosion of sweet and tart, ensuring a truly dynamic eating experience.

But for me, the undeniable star of this cake is the crumb topping. Honestly, it was my favorite part! The moment I pulled the cake from the oven, the enticing aroma filled the kitchen, and I couldn’t resist sampling little bits of the crumb topping. It’s incredibly crunchy, rich in flavor with hints of cinnamon and nutmeg, and perfectly sweet without being cloying. This buttery, textured streusel adds an essential layer of deliciousness, elevating the entire cake from simple to extraordinary. It’s the kind of topping you find yourself picking off the top, savoring each crisp, sugary morsel.

Preparing this Blueberry Crumb Cake is a rewarding experience from start to finish. From combining the simple ingredients to watching it bake to golden perfection, every step is enjoyable. The aroma that fills your home as it bakes is utterly intoxicating, promising a delectable treat to come. It’s a recipe that’s accessible enough for beginner bakers but impressive enough to wow even the most discerning dessert connoisseurs. This cake is ideal for breakfast or brunch, a delightful afternoon snack, or the perfect ending to a summer dinner party.

Directions:

For the Crumb Topping:
In a medium bowl, combine the granulated sugar, light brown sugar, ground cinnamon, and ground nutmeg. Whisk these dry ingredients together until well combined. Gradually stir in the melted unsalted butter, mixing until the sugar mixture is fully moistened. Then, add the all-purpose flour and mix thoroughly with a fork or your fingers until the mixture resembles coarse crumbs. Set this delicious crumb topping aside while you prepare the cake batter.

For the Cake:

Preheat your oven to 350°F (175°C). Prepare a 9-inch round baking pan by generously buttering the bottom and sides, then lightly flouring it. Tap out any excess flour. This will help prevent the cake from sticking.

In the bowl of an electric mixer fitted with the paddle attachment, cream together the room temperature unsalted butter and granulated sugar on high speed for about 4 to 5 minutes. Continue mixing until the mixture is light, fluffy, and pale in color. This step is crucial for incorporating air and achieving a tender cake texture.

Reduce the mixer speed to low. Add the extra-large eggs one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed. Next, add the pure vanilla extract, finely grated lemon zest, and sour cream, mixing until just combined. Be careful not to overmix at this stage.

In a separate medium bowl, sift together the remaining dry ingredients: all-purpose flour, baking powder, baking soda, and kosher salt. Sifting helps to aerate the flour and ensures an even distribution of the leavening agents.

With the mixer on low speed, gradually add the dry flour mixture to the wet batter, mixing until just combined. Mix only until no streaks of flour remain; overmixing can lead to a tough cake. Gently fold in the fresh blueberries using a spatula. Stir carefully to ensure the blueberries are evenly distributed throughout the batter without crushing them.

Spoon the cake batter evenly into the prepared 9-inch round baking pan. Use a knife or an offset spatula to spread the batter smoothly. With your fingers, evenly crumble the reserved streusel topping over the entire surface of the batter, ensuring good coverage.

Bake for 40 to 50 minutes, or until a wooden skewer or cake tester inserted into the center comes out clean. The top should be golden brown and the crumbs should look crisp. If the topping browns too quickly, you can loosely tent the cake with aluminum foil. Once baked, remove the cake from the oven and let it cool completely on a wire rack before attempting to slice it. This allows the cake to set properly and prevents it from crumbling. Serve slices plain, or for an extra touch of sweetness, dust with confectioners’ sugar just before serving.

Enjoy this delightful Blueberry Crumb Cake as a splendid breakfast treat, a satisfying brunch centerpiece, or a lovely dessert that’s sure to impress!
