These easy carrot fritters are packed full of flavor with the addition of cilantro, shallots, and garlic. They make a great side dish and an even easier appetizer. Serve plain or with my delicious Greek yogurt cilantro lime sauce!
Ingredients
- 2 cups grated carrots
- 1 large egg
- 3 tablespoons minced fresh cilantro, divided
- 1 small shallot, finely minced
- 1 clove garlic, finely minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1/4 cup vegetable oil (soybean oil recommended)
- 1 cup plain Greek yogurt
- 2 tablespoons fresh lime juice
Instructions
- Set aside grated carrots. If they release any moisture, make sure to gently squeeze and drain it off. This step is crucial for crispy fritters.
- In a medium-sized mixing bowl, add the large egg and whisk it until it’s light and frothy.
- To the whisked egg, add 2 tablespoons of the minced cilantro, the finely minced shallots, minced garlic, kosher salt, black pepper, and all-purpose flour.
