  • 16 ounces (approx. 1 lb) pizza dough, brought to room temperature
  • 2 tablespoons cornmeal, for dusting
  • 3-4 tablespoons olive oil, divided
  • 1 small yellow onion, thinly sliced
  • 8 ounces cremini or white button mushrooms, thinly sliced
  • 1 clove garlic, minced
  • 2 cups shredded mozzarella cheese, divided
  • 2 cups fresh lamb’s quarters leaves (ensure to use only the leaves, washed and dried)
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon freshly cracked black pepper, or to taste
