The Inspiration: A Scoop of Pure Genius

My journey with this incredible flavor began at a charming local establishment – The Blue Pig, an artisanal ice cream shop run by a dear friend. The moment I tasted their malted brownie ice cream, I knew I had stumbled upon something truly special. It had that perfect balance of sweetness, the unique depth of malt, and the satisfying chew of homemade brownies. It was love at first bite, and from that day on, I found myself constantly drawn back to her shop, ready to buy them out of their entire stock!

After countless scoops and much admiration, I finally decided it was time to recreate this magic in my own kitchen. The challenge was to capture that same authentic, soul-satisfying flavor that made The Blue Pig’s version so unforgettable. I wanted to develop a recipe that was accessible for home cooks but still delivered on the promise of an elevated, indulgent dessert. What started as an inspiration quickly blossomed into a mission to perfect the ultimate Vanilla Malted Brownie Ice Cream, ensuring every spoonful evoked that same delightful experience.

The Perfect Trio: Vanilla, Malt, and Fudgy Brownies

The beauty of this recipe lies in the synergy of its three main components, each playing a crucial role in creating a harmonious and unforgettable flavor profile. We start with a rich, vanilla bean-flecked homemade ice cream base. Using a real vanilla bean, split lengthwise to expose its aromatic seeds, infuses the custard with a depth of flavor that pure extract alone simply cannot achieve. This foundational vanilla provides a warm, sweet backdrop that allows the other elements to truly shine.

Next, we introduce the nostalgic and uniquely comforting taste of malt. For this, I used high-quality malted milk powder from King Arthur Flour. Malted milk powder adds a distinctively complex flavor—a delicate blend of nutty, toffee-like notes with a subtle toastiness that evokes classic milkshakes and childhood treats. It’s this malt essence that transforms a simple vanilla ice cream into something truly special, adding an layer of sophistication and warmth that distinguishes it from other flavors.

Finally, we incorporate chunks of unbelievably fudgy brownies. These aren’t just any brownies; they are crafted using a specific recipe from Scharffen Berger, renowned for their exceptional chocolate. The key here is using Scharffen Berger 70% Cacao Bittersweet Chocolate, which delivers an intense, deep chocolate flavor without being overly sweet. The brownies are baked to be dense, chewy, and exquisitely fudgy, providing the perfect textural contrast to the smooth ice cream. Chopped into bite-sized pieces, they ensure that every scoop offers a delightful burst of rich chocolate goodness. When these three elements—vanilla bean-kissed ice cream, aromatic malt, and dense fudgy brownies—come together, the result is nothing short of ahhhhhhhhhhhmazing!

Crafting Your Culinary Masterpiece: Tips for Success

Making homemade ice cream, especially a custard-based one, might seem daunting, but with a few tips, you’ll master it in no time. The secret to a velvety smooth ice cream lies in the custard base. Tempering the egg yolks correctly is crucial; gradually whisking hot milk into the yolks prevents them from scrambling. Cooking the custard gently over low heat, stirring constantly until it thickens enough to coat the back of a spoon, is another vital step. Don’t rush this process! Proper chilling of the custard base—preferably overnight—is paramount. This allows the flavors to meld beautifully and the mixture to get thoroughly cold, which results in a much smoother, creamier final product once it goes into the ice cream maker.

When it comes to the brownies, quality ingredients make all the difference. Using good quality bittersweet chocolate, like Scharffen Berger, will give your brownies that deep, complex chocolate flavor that complements the ice cream so well. Be careful not to overmix the batter once the flour is added, as this can lead to tough brownies. Bake them until a toothpick inserted in the center comes out with moist crumbs, not wet batter, for that perfect fudgy texture. And remember, allow them to cool completely before chopping – warm brownies are delicious but won’t hold their shape well in ice cream.

The Joy of the First Scoop (and the Many After)

There’s something incredibly satisfying about tasting homemade ice cream, especially when it’s still fresh from the ice cream maker. At this stage, it has a soft, almost ethereal texture, much like an elevated soft-serve. I confess, I often find myself sneaking spoonfuls directly from the machine before it even makes it to the freezer. It’s an irresistible, pure moment of culinary bliss. The slight warmth of the fresh churn, combined with the intense flavors, creates an experience that’s hard to beat.

Once you’ve savored those first few soft scoops, it’s time for the final touch: incorporating the malted milk powder and the generously chopped brownie pieces. Fold them gently into the freshly churned ice cream to ensure they’re evenly distributed. Then, transfer this delectable mixture into a freezer-safe container, pressing a piece of parchment paper directly onto the surface before covering it with a lid. This crucial step helps prevent ice crystals from forming, ensuring your ice cream remains wonderfully creamy. A minimum of four hours in the freezer, or preferably overnight, will allow it to firm up to the perfect scoopable consistency, though patience will be your greatest challenge!

Vanilla Malted Brownie Ice Cream

Experience the ultimate homemade dessert with this rich and creamy Vanilla Malted Brownie Ice Cream, featuring real vanilla bean, comforting malt, and chunks of fudgy bittersweet chocolate brownies.

Yield: 1 quart ice cream

Ingredients:

For Ice Cream:
1 cup whole milk
Pinch of salt
3/4 cup white sugar
1 vanilla bean – split lengthwise, seeds scraped
2 cups heavy cream
5 large egg yolks
1 teaspoon pure vanilla extract
1/2 cup malted milk powder
1/2 batch chopped (bite size) brownies (from recipe below)

For Brownies:
6 ounces Scharffen Berger 70% Cacao Bittersweet Chocolate, chopped
3/4 cup unsalted butter, cut into pieces
1 1/2 cups granulated sugar
3 large eggs
1 teaspoon pure vanilla extract
1 cup all-purpose flour
Optional: 1/2 cup chopped nuts (walnuts or pecans)

Source: Ice cream adapted from David Lebovitz and brownie from Scharffen Berger.

Directions:

For Ice Cream:

  1. In a medium saucepan, combine the whole milk, salt, and granulated sugar. Scrape the seeds from the vanilla bean into the milk mixture using a paring knife, then add the vanilla bean pod to the saucepan. Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the sugar. Once simmering, remove from heat, cover, and let infuse for at least one hour (or longer for a stronger vanilla flavor).
  2. Prepare an ice bath: place a 2-quart (2-liter) bowl in a larger bowl partially filled with ice and water. Set a fine-mesh strainer over the top of the smaller bowl. Pour the heavy cream into the smaller bowl.
  3. In a separate medium bowl, whisk together the egg yolks until smooth.
  4. Rewarm the infused milk mixture over medium heat until it’s hot but not boiling. Gradually pour about half of the hot milk into the egg yolks, whisking constantly to temper the yolks. This prevents the eggs from scrambling.
  5. Scrape the tempered egg yolk mixture back into the saucepan with the remaining milk. Cook over low to medium-low heat, stirring constantly with a heat-resistant spatula, scraping the bottom of the pan to prevent scorching. Continue cooking until the custard thickens enough to coat the back of the spatula (it should reach about 175-180°F or 80-82°C). Do not boil.
  6. Immediately strain the hot custard through the fine-mesh strainer into the heavy cream in the ice bath. Stir the custard over the ice bath until it is cool. Remove the vanilla bean pod. Stir in the pure vanilla extract.
  7. Cover the bowl and refrigerate the custard thoroughly, preferably overnight. This chilling process is essential for achieving the best texture and flavor.
  8. Once thoroughly chilled, remove the vanilla bean pod. Freeze the custard in your ice cream maker according to the manufacturer’s instructions.
  9. When the ice cream is frozen to a soft-serve consistency, gently fold in the malted milk powder and the chopped brownies.
  10. Transfer the ice cream to a freezer-safe container. Press a piece of parchment paper directly onto the surface of the ice cream to prevent ice crystals, then cover with an airtight lid. Freeze for at least 4 hours, or until hard and completely set.

For Brownies:

  1. Preheat your oven to 325°F (160°C). Butter a 9” x 13” baking pan, or line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In the top of a double boiler set over simmering water, melt the chopped bittersweet chocolate and butter, stirring frequently until the mixture is smooth and glossy. Alternatively, you can microwave in 30-second intervals, stirring after each, until melted.
  3. Remove the top of the double boiler from the heat (or microwave bowl). Stir in the granulated sugar until well combined.
  4. Add the eggs one by one, stirring thoroughly after each addition until fully incorporated. Stir in the pure vanilla extract.
  5. Add the flour and stir gently until just blended. Be careful not to overmix the batter. If using, stir in the chopped nuts.
  6. Scrape the brownie batter into the prepared baking pan and spread it evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (not wet batter).
  8. Cool the brownies completely in the pan on a wire rack before cutting into bite-sized pieces for the ice cream.
