Roasted eggplant is an easy, delicious side dish you can serve with most mains, or use to make other wonderful eggplant recipes. From easy stuffed eggplants to delicious eggplant pasta, from roasted eggplant dip to baked eggplant pizza, mastering how to roast eggplants is an essential cooking skill you’ll want to perfect.

Ingredients

  • 2 medium eggplants
  • 1 tablespoon extra virgin olive oil
  • ⅓ teaspoon salt
  • ¼ teaspoon black pepper

For the seasoning

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar or other vinegar
  • 1 clove garlic minced
  • ¼ cup parsley finely chopped
  • ¼ teaspoons dried oregano
  • ⅛ teaspoon red pepper flakes
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 430°F (220°C). Line a baking sheet with parchment paper.

    Wash and dry 2 medium eggplants, remove the stems, and cut them into ⅓ inch (1 cm) discs.

  2. Arrange the eggplant discs on the baking sheet, brush them with 1 tablespoon extra virgin olive oil, and season evenly with ⅓ teaspoon salt and ¼ teaspoon black pepper.

  3. Roast for 20 minutes, then flip and roast for another 10 minutes, until golden and tender. Once done, transfer the roasted eggplant onto a serving platter.

    The eggplant discs should be beautifully golden, slightly browned at the edges, and tender throughout, but not dry.

  4. Drizzle generously with the prepared seasoning while the eggplant is still hot. For optimal flavor infusion, ideally set aside for about 15 minutes before serving to allow the eggplant to fully absorb the delicious condiment.

MAKE AHEAD & STORAGE

Make ahead: This recipe is excellent for making ahead as roasted eggplant can be served deliciously at room temperature. Feel free to prepare it up to 6 hours before your serving time.

Refrigerator: Store any leftovers in an airtight container or covered with plastic wrap on the serving platter for up to 3 days. For best flavor, take them out of the fridge approximately 15 minutes before eating to allow them to come to room temperature.

Freezer: Allow the roasted eggplant slices to cool down completely. Arrange them on a platter without overlapping and freeze until solid. Once frozen, you can transfer the individual slices into a freezer-safe bag for longer storage.

Alternatively, you can layer the slices in a freezer bag with pieces of parchment paper in between each layer to prevent sticking.
