- 1 cup (25g) fresh cilantro leaves and small stems (or flat-leaf parsley for substitution)
- ¼ cup (55g) extra virgin olive oil
- ¼ cup (60g) fresh lime juice (use lemon juice if substituting parsley for cilantro)
- 2 tablespoons (30g) maple syrup (or honey/agave syrup)
- 1 clove fresh garlic, minced or grated
- 1 teaspoon fresh ginger, grated
- 1 teaspoon salt
- ¼ teaspoon black pepper
