Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, grated
  • 1 teaspoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1½ teaspoon turmeric powder (optional, for color and additional health benefits)
  • ½ teaspoon ground coriander (optional)
  • ⅓ teaspoon red pepper flakes (adjust to your spice preference)
  • 2 cups vegetable broth
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) chickpeas (drained and rinsed) or 1½ cups of cooked chickpeas
  • 2 pounds sweet potatoes, peeled and cut into large bite-size chunks
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 can (14 oz) full-fat coconut milk (for rich creaminess)
  • 1 teaspoon garam masala (optional, to finish the flavors)
  • Serve with: squeezed lime or lemon, fresh cilantro, basmati rice, and a dollop of yogurt (dairy or non-dairy)

Instructions

  1. Begin by preparing your sweet potatoes: peel them thoroughly and then cut them into roughly large bite-size chunks. This ensures even cooking and a substantial texture in the curry.

  2. In a large pot or Dutch oven, warm 1 tablespoon of olive oil over medium heat. Add the 1 chopped onion and sauté for about 5 minutes until it softens and becomes translucent. Next, stir in the 3 cloves of grated garlic and 1 teaspoon of grated ginger, cooking for just 1 minute until fragrant. Add the spices: 2 teaspoons curry powder, 1 teaspoon ground cumin, 1½ teaspoon turmeric powder (if using), ½ teaspoon ground coriander (if using), and ⅓ teaspoon red pepper flakes. Toast the spices for 1 minute, stirring constantly, to release their vibrant aromas.

  3. Pour in 2 cups of vegetable broth and 1 can (15 oz) of crushed tomatoes. Add the 1 can (15 oz) of drained chickpeas and the diced sweet potatoes. Season the mixture with 1 teaspoon salt and ⅛ teaspoon black pepper. Bring the curry to a gentle simmer, then reduce the heat, cover, and cook for approximately 20 minutes, or until the sweet potatoes are starting to become tender.

  4. Stir in the 1 can (14 oz) of coconut milk. Continue to simmer for another 10 minutes, uncovered, allowing the flavors to meld and the sweet potatoes to become fully fork-tender, and the curry to thicken to a wonderfully creamy consistency. Once cooked, turn off the heat and stir in the 1 teaspoon of garam masala (if using) for a final layer of aromatic flavor.
