Embrace Effortless Summer Cooking with Foil Packets

Summer, for many, is synonymous with grilling. The ability to cook outdoors, soaking in the good weather, and perhaps most appealingly, the promise of minimal cleanup, makes grilling an irresistible option. While a classic grilled steak or burger always hits the spot, there’s a world of culinary creativity awaiting on the grates, especially when you discover the magic of foil packet dinners. These ingenious meals offer a convenient, delicious, and incredibly versatile way to prepare an entire dish with virtually no pots or pans to scrub afterward. It’s the quintessential grab-and-go meal, even when you’re staying put in your own backyard.

Foil packet cooking harks back to simpler times, evoking nostalgic memories of camping trips and firepit meals. Growing up, these rustic culinary adventures were a highlight of my summers, with my mom mastering the art of throwing an assortment of ingredients into foil, tossing it into the embers, and waiting for the delicious transformation. While our childhood versions often leaned heavily on potatoes – which, admittedly, are fantastic when cooked over a fire – the core concept remains brilliantly effective: combining protein and vegetables in a sealed environment to create a tender, flavorful, and complete meal.

Why Chicken Sausage is Your Foil Packet Hero

This foil packet dinner takes that cherished childhood memory and elevates it with a modern twist. Instead of plain grilled chicken, we’re featuring premium chicken sausage, specifically the al fresco all natural chicken sausage. It’s a game-changer for foil packet meals, bringing incredible flavor and a lean protein punch that’s hard to beat. While al fresco offers a fantastic range of flavors, their sundried tomato variety is particularly outstanding, infusing the entire packet with a savory, Mediterranean-inspired essence.

For those mindful of their diet and seeking wholesome options, al fresco chicken sausage is a clear winner. It’s crafted without artificial ingredients, preservatives, nitrates, or nitrites, and is both MSG and gluten-free. Plus, it boasts a significantly lower fat content compared to traditional pork sausages, making it an excellent choice for anyone tracking macros or simply aiming for a healthier meal. This commitment to quality and natural ingredients ensures you’re not just enjoying a convenient meal, but a genuinely nutritious one.

Another incredible benefit of using al fresco precooked chicken sausage is the sheer convenience it offers. Since it’s already cooked, all you need to do is warm it through while your carefully selected vegetables steam to tender perfection. This significantly cuts down on prep and cook time, making it an ideal choice for quick weeknight dinners when time is precious.

The Perfect Medley of Summer Vegetables

When it comes to the vegetables, the beauty of foil packet cooking lies in its flexibility. While you can certainly use whatever seasonal produce you have on hand or what your family loves most, I’ve opted for a vibrant combination that perfectly complements the chicken sausage: crisp green beans, sweet bell peppers (red and yellow for a pop of color), tender zucchini, delicate yellow squash, and thinly sliced red onion. This medley not only delivers a delightful array of textures and flavors but also ensures you’re getting a generous dose of essential nutrients and fiber.

To tie all these delicious elements together, a simple yet potent herbed olive oil mixture is key. Fresh garlic, fragrant thyme, aromatic dried oregano, and a touch of dried basil, along with kosher salt and optional crushed red pepper flakes for a subtle kick, are whisked into olive oil. This savory concoction coats every piece of sausage and vegetable, ensuring that each bite is bursting with Mediterranean-inspired flavor. As the packet cooks, the herbs and garlic infuse into the steam, creating an irresistible aroma and deepening the overall taste profile of your meal.

Grill or Oven: Your Choice for a Perfect Meal

One of the many charms of this chicken sausage and vegetable foil packet dinner is its adaptability. While grilling imparts that wonderful smoky flavor that defines summer cooking, this meal can be just as easily prepared in your oven. This means no matter what the weather throws at you – be it a surprise summer shower or a sweltering heatwave – you can still enjoy this delicious, healthy dinner. I’ve included detailed instructions for both methods in the recipe below, ensuring your success regardless of your chosen cooking appliance.

For many, the grill is the undisputed king of summer cooking, and for good reason. The direct heat and convection cooking within the foil packet create perfectly steamed vegetables and warmed sausage, all while adding that coveted char and subtle smokiness. When grilling, aim for medium-high heat and be sure to flip your packets halfway through to ensure even cooking. The key is to seal your foil packets tightly, creating a little steam oven that locks in all the moisture and flavor. Using heavy-duty foil is highly recommended to prevent tears and leakage, ensuring none of that delicious herbed olive oil escapes.

However, if you’re like me and prefer to keep your air conditioning bill in check during the hotter months, the oven offers a fantastic alternative. Cooking these packets in a 425-degree Fahrenheit oven yields equally delicious results, steaming the ingredients to perfection. The principle remains the same: thorough mixing, careful sealing of the foil, and placing them on a baking sheet. This flexibility means you can enjoy the same great taste and convenience year-round, without having to choose between comfort and a fantastic meal. Whether on the grill or in the oven, you’re guaranteed a satisfying and wholesome dinner with minimal fuss. It’s truly a win-win situation!

This chicken sausage and vegetable foil packet dinner is super simple to make and perfect for summer. Packed full of chicken sausage, sweet peppers, zucchini, yellow squash, red onion, and green beans and drizzled with herbed olive oil.

Equipment

  • Morton Kosher Salt
  • Extra Virgin Olive Oil
  • Heavy Duty Foil

Ingredients

  • 1 4-pack al fresco all natural sundried tomato chicken sausage, thinly sliced
  • 1 pound green beans, trimmed
  • 1 red bell pepper, cored and thinly sliced
  • 1 yellow bell pepper, cored and thinly sliced
  • 1 small red onion, thinly sliced
  • 1 small zucchini, trimmed, cut lengthwise and then into half-moons
  • 1 small yellow summer squash, trimmed, cut lengthwise and then into half-moons
  • 3 tablespoons olive oil
  • 2 cloves garlic, grated or minced
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1 teaspoon crushed red pepper flakes, optional

Instructions

  1. Preheat your grill to medium-high heat (about 375-400°F) or your oven to 425°F (220°C).
  2. In a large bowl, combine the thinly sliced chicken sausage, trimmed green beans, sliced red and yellow bell peppers, red onion, zucchini, and yellow squash.
  3. In a small separate bowl, whisk together the olive oil, grated garlic, fresh thyme leaves, dried oregano, dried basil, kosher salt, and crushed red pepper flakes (if using). Pour this herbed oil mixture over the vegetables and sausage in the large bowl and toss gently to ensure all ingredients are evenly coated.
  4. Tear off four 16-inch long pieces of heavy-duty aluminum foil. Divide the sausage and vegetable mixture equally among the four pieces of foil, placing the mixture in the center of each. Bring the long edges of the foil together and fold them over several times to create a tight seal. Then, fold and crimp the short ends to completely seal the packet, ensuring no steam can escape. If your foil feels too thin or the packet is very full, double-wrap with an additional piece of foil.
  5. If cooking on the grill: Place the foil packets directly on the preheated grill grates. Cook for approximately 20-25 minutes, flipping the packets halfway through cooking. Carefully remove one packet from the grill and open it to check the doneness of the vegetables. They should be tender-crisp. If not, reseal the packet and continue cooking for an additional 5-10 minutes, checking periodically.
  6. If cooking in the oven: Place the foil packets on a large baking sheet to catch any potential drips. Cook in the preheated oven at 425°F (220°C) for about 20-25 minutes. Carefully remove one packet from the oven and open it to check if the vegetables are cooked to your desired tenderness. If not, reseal and continue cooking for a few more minutes.
  7. Once cooked, carefully open each foil packet (watch out for steam!) and serve immediately. Enjoy your vibrant and flavorful Chicken Sausage and Vegetable Foil Packet Dinner!
