Waffles hold a cherished spot in the realm of breakfast foods, offering a canvas for countless flavors and toppings. While some might first think of savory renditions, like my previous waffle recipe, there’s an undeniable allure to a sweet, comforting waffle, generously smothered in butter and maple syrup. These apple cinnamon waffles lean into that classic sweet indulgence, but with a wholesome, gluten-free twist that doesn’t compromise on taste or texture. It’s a complete sensory experience that promises to elevate any morning.

What makes this particular recipe stand out is its thoughtful approach to gluten-free baking. Thanks to the exceptional quality of Pamela’s Artisan gluten-free flour blend, these waffles achieve an incredible lightness and crispiness that can often be elusive in gluten-free recipes. Paired with the seasonal sweetness of apples and the cozy warmth of cinnamon, this dish truly embodies the essence of autumn. Imagine a comforting fall romance, now reimagined as a delightful breakfast that’s both nourishing and utterly delicious.

For those eager to whip up perfect waffles every time, a reliable waffle iron is key. I had the pleasure of borrowing this waffle iron, and its performance was truly impressive, making the process even more enjoyable. Investing in a good quality waffle iron can make a significant difference in achieving that ideal golden-brown exterior and tender interior.

The Ultimate Gluten-Free Breakfast Experience

The inspiration for these magnificent waffles came during a special visit from my best friend over Labor Day. Having recently embarked on a gluten-free lifestyle, she expressed a heartfelt craving for a truly satisfying, carb-filled breakfast – something comforting and delicious that didn’t compromise her dietary needs. As a devoted best friend, there was no greater joy than to make her carb-filled breakfast dreams a reality. The challenge was to create a gluten-free waffle that tasted as good, if not better, than its traditional counterpart, and these waffles delivered spectacularly.

The result was nothing short of perfection: waffles that were incredibly light and fluffy, each bite bursting with the aromatic warmth of cinnamon-spiced apples. They are the epitome of fall flavors, yet delightful enough to enjoy year-round. Beyond satisfying a craving, they are the kind of breakfast that makes a lasting impression, perfect for guests or simply for treating yourself. If you’re a follower of mine on Instagram, you might have even caught a sneak peek of these beauties in their “behind the scenes” glory, capturing the simple joy of their creation.

Why Choose Gluten-Free Waffles?

For many, adopting a gluten-free diet is a necessity, but that doesn’t mean sacrificing the pleasure of beloved foods. Traditional waffles, often made with wheat flour, are usually off-limits. This recipe bridges that gap, providing a delicious alternative that’s accessible to everyone, including those with gluten sensitivities or celiac disease. Using a high-quality gluten-free flour blend, like Pamela’s Artisan, is crucial for achieving the ideal texture – light, airy, and with just the right amount of crispness without the grittiness sometimes associated with GF baking. It means everyone at the breakfast table can enjoy the same delightful meal, fostering inclusion and shared culinary joy.

The Magic of Apple and Cinnamon

The combination of apples and cinnamon is a timeless pairing, evoking feelings of comfort, warmth, and nostalgia. In these waffles, this classic duo truly shines. The apples, softened and infused with dark brown sugar and apple pie spice, create a wonderfully sweet and slightly tart filling that’s distributed throughout the waffle. Each bite offers tender pieces of fruit alongside the fluffy waffle texture, all brightened by the fragrant notes of cinnamon and other warm spices. This blend isn’t just about flavor; it’s about creating an inviting aroma that fills your kitchen, setting a cozy and cheerful tone for the day.

Tips for Waffle Perfection

Making great waffles is an art, but it’s an accessible one with a few simple tips:

  • Waffle Iron Mastery: Always preheat your waffle iron thoroughly. A well-heated iron ensures even cooking and a beautiful golden crust. Don’t forget to lightly spray it with nonstick spray, even if it claims to be non-stick, especially for gluten-free batters which can sometimes be more prone to sticking.
  • Don’t Overmix: When combining your wet and dry ingredients, mix just until combined. A few lumps are perfectly fine! Overmixing gluten-free batter can lead to tough waffles, as it develops the starches too much.
  • Rest the Batter: While not strictly necessary, allowing the batter to rest for 5-10 minutes can help the flour fully hydrate, resulting in a slightly better texture.
  • Portion Control: Avoid overfilling your waffle iron. Start with a smaller amount of batter and add more if needed. Overfilling can lead to uneven cooking and messy overflow.
  • Serving Suggestions: Beyond the classic maple syrup and butter, these waffles are fantastic with a dollop of whipped cream, a sprinkle of toasted pecans, a dusting of powdered sugar, or even a scoop of vanilla bean ice cream for a dessert-like experience. The remaining cinnamon apple mixture is an absolute must-have topping, providing extra warmth and flavor.
  • Make Ahead & Storage: Waffles are surprisingly freezer-friendly. Cook them fully, let them cool completely on a wire rack, then freeze in a single layer on a baking sheet before transferring to an airtight bag. Reheat them in a toaster, toaster oven, or even the waffle iron for a quick and easy breakfast on busy mornings.

Ingredient Spotlight

Each ingredient in this recipe plays a vital role in creating the perfect waffle. The baking powder and baking soda work in tandem to give the waffles their incredible lift and airy texture. Apple cider vinegar, when combined with whole milk, acts as a buttermilk substitute, adding a subtle tang and contributing to the tender crumb. Dark brown sugar not only sweetens but also adds moisture and a deeper, molasses-like flavor that complements the apples and cinnamon beautifully. And of course, the quality of your apples matters – choose firm, flavorful varieties like Honeycrisp, Gala, or Granny Smith for the best results.

These gluten-free apple cinnamon waffles are more than just a recipe; they are an invitation to slow down, savor the moment, and enjoy a truly comforting meal. Whether you’re making them for family, friends, or simply as a special treat for yourself, they are guaranteed to bring warmth and happiness to your table. Give them a try and discover your new favorite breakfast tradition.

These irresistible gluten-free apple cinnamon waffles are brimming with tender, spiced apples, all nestled within an easy-to-make gluten-free waffle base. A truly perfect start to your day!

Yield: 6 waffles

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

For apples:
2 tablespoons unsalted butter
3 apples, peeled, cored, and diced small
3 tablespoons dark brown sugar
2 teaspoons apple pie spice

For waffles:
1-1/2 cup Pamela’s Artisan gluten free flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoons kosher salt
1/4 teaspoon apple pie spice
1-1/4 cup whole milk
1 tablespoon apple cider vinegar
1/4 cup dark brown sugar
2 tablespoons melted butter
2 large eggs

Directions:

For apples:
Set a large skillet over medium heat. Add in the butter and, once melted, add the diced apples, brown sugar, and apple pie spice.

Cook, stirring occasionally, until the apples are tender and the brown sugar mixture has thickened into a syrupy glaze. Remove from heat and allow to cool slightly while you prepare the waffle batter.

For waffles:

Preheat your waffle iron according to the manufacturer’s instructions.

In a medium-sized mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, kosher salt, and apple pie spice until well combined.

In a large mixing bowl, combine the whole milk, apple cider vinegar, dark brown sugar, melted butter, and eggs. Whisk these wet ingredients together thoroughly until completely combined and smooth.

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are acceptable.

Gently fold in about half of the cooled apple mixture into the waffle batter.

Lightly spray your preheated waffle iron with a nonstick cooking spray. Pour or scoop the waffle batter onto the iron, using the amount recommended by your waffle iron’s directions. Cook until golden brown and crisp, following your waffle iron’s indicator lights or timing.

Serve the cooked waffles immediately. Top generously with the remaining warm apple mixture, a dusting of powdered sugar, a pat of butter, and a generous drizzle of maple syrup. The combination of these toppings creates an unforgettable flavor experience!
