The Wonder of Zoodles: A Healthy & Fun Alternative to Pasta
One of the standout features of this recipe is the use of zucchini noodles, affectionately known as “zoodles.” Swapping traditional pasta for spiralized zucchini instantly transforms this dish into a low-carb, gluten-free, and nutrient-dense option. For those mindful of their carbohydrate intake, zoodles offer a fantastic way to enjoy a “pasta” dish without the heavy feeling that often accompanies traditional grain-based noodles.
Beyond the health benefits, making zoodles is genuinely enjoyable! The process of spiralizing vegetables is oddly satisfying and creates visually stunning, uniform strands that elevate the dish’s presentation. Plus, the crisp-tender texture of fresh zoodles provides a refreshing crunch that you simply don’t get from conventional pasta. It’s a light, bright, and vibrant foundation that perfectly embodies a “new year, new me” approach to healthy eating, or simply a desire for fresher meals.
Customizing Your Zoodle Experience
While I’m particularly fond of zucchini for its mild flavor and perfect texture, the world of spiralized vegetables is vast and exciting. If zucchini isn’t your favorite, feel free to experiment with other options. Yellow summer squash makes a wonderful alternative, offering a similar mild taste and tender bite. For a slightly sweeter and heartier option, spiralized butternut squash can also be a delicious choice, especially in the fall or winter months.
No matter which vegetable you choose, the key is to embrace the freshness and versatility that zoodles bring to your plate. They absorb the flavors of the pesto and the rich garlic butter from the shrimp beautifully, creating a well-rounded and incredibly satisfying meal.

Crafting the Perfect Pesto Zoodle Base
The pesto is the heart of the zoodle base, providing an aromatic and herbaceous coating that ties the dish together. You can opt for a high-quality store-bought pesto for ultimate convenience, or, if time allows, whip up a batch of homemade pesto for an extra layer of freshness. Whichever you choose, ensure it’s rich in basil, garlic, and Parmesan for that authentic Italian-inspired flavor. The addition of sun-dried tomatoes introduces a wonderful sweet-tart tang and a chewy texture that contrasts beautifully with the zoodles. A sprinkle of grated Parmesan cheese before serving adds a final touch of salty, nutty depth.
Tossing the zoodles with the pesto, sun-dried tomatoes, and Parmesan right before serving ensures that the zucchini retains its desirable crispness. If you prefer a slightly softer zoodle, a quick sauté in a hot skillet with a touch of olive oil before tossing will soften them beautifully without making them soggy. However, many find that keeping them fresh provides the best textural contrast to the creamy shrimp.

These garlic shrimp pesto zoodles are the perfect quick and easy weeknight meal. Spiralized zucchini tossed in pesto and topped with creamy garlic butter shrimp. You’re going to love this recipe!
Ingredients
- 2 medium-sized zucchini, about 12 inches long
- 1 10.5 ounce box Gorton’s Garlic Butter Shrimp Scampi
- 1/2 cup pesto
- 1/4 cup chopped sundried tomatoes
- 2 tablespoons grated Parmesan cheese
- Minced fresh basil, for topping
- Crushed red pepper flakes, for topping
Instructions
- Spiralize your zucchini to your liking. I use the large spiralizer blade on my spiralizer. Once spiralized, set aside.
- In a medium-sized skillet, prepare the Gorton’s garlic butter shrimp scampi according to the box directions.
- Take your noodles and toss them with the pesto, sundried tomatoes, and Parmesan cheese.
- Separate the zucchini noodles onto 2 plates, top each pile of zoodles with an equal amount of shrimp, and garnish with desired amounts of fresh basil and crushed red pepper flakes.
Notes
You can also quickly warm your noodles in a skillet with a little olive oil and then toss them in pesto. Warming them does soften the zoodles faster, so I find keeping them fresh is the best way for me to maintain their crisp-tender texture. However, it’s entirely up to your preference!
