2. BLEND ALL INGREDIENTS

  1. To a food processor, add the soaked chickpeas, 2 tablespoons chickpea flour, 1 peeled and chopped yellow onion, 6 chopped cloves of garlic, 1 cup chopped flat-leaf parsley, ½ cup chopped mint leaves (optional), 1½ teaspoons ground cumin, 1 teaspoon ground coriander, 1¼ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon cayenne pepper (or chili powder), and 2 teaspoons baking powder.

  2. Blend until you achieve a fine texture, making sure to scrape down the sides of the food processor frequently. This should take approximately 1 to 2 minutes maximum.

3. SHAPE THE FALAFEL

  1. The easiest method to shape the falafel is by using an ice cream scoop or a cookie dough scoop.

  2. Scoop the falafel mixture into a ball, then press it firmly with your hand into the scoop to ensure it holds together. Rinse the scoop with water after every 3 falafels or if they begin to stick.

  3. Arrange the shaped falafels on a baking sheet lined with parchment paper.

DEEP-FRIED FALAFEL

  1. Warm up the frying oil to 320°F (160°C) in a small pot or saucepan with tall edges. Ensure you only fill the pot to half its edges, as the oil will expand as it heats and when you add the falafel. Use a kitchen thermometer to accurately check the oil temperature, aiming for between 300°F (150°C) and 340°F (170°C).

  2. Gently dip the falafel into the hot oil, one by one. We recommend frying 3 or 4 at a time to avoid overcrowding. Cook them in the oil for about 3.5 – 4 minutes, or until they are golden brown all around. Move the falafel around as they cook with a wooden spoon to ensure even frying and consistent color.

  3. Carefully remove the falafel from the oil and arrange them on a plate lined with kitchen paper to absorb excess oil. Repeat this process until all your falafel are cooked to crispy perfection.

AIR FRYER FALAFEL

  1. Brush the bottom of your air fryer basket lightly with extra virgin olive oil. Then, place the falafels in the air fryer, ensuring there is enough space between each falafel for optimal air circulation. Drizzle the falafels with a little more extra virgin olive oil for extra crispiness.

  2. Air fry at 400°F (200°C) for approximately 12 minutes, or until they are golden brown and wonderfully crunchy. For even browning, you may want to turn them around once halfway through the cooking time.

MAKE AHEAD & STORAGE

– Make ahead: Soak the chickpeas at least 12 to 24 hours in advance. Falafel is best when freshly cooked for optimal crispiness. However, you can cook them ahead of time and store them, ready to be warmed up.

– Refrigerator: Cooked falafel keeps well in the fridge for up to 2 days, though they may lose some of their crunch after the first day.

– Freezer: Allow cooked falafel to cool down completely, then transfer them to a freezer-friendly bag or airtight container and freeze for up to 3 months.

– Thaw: Defrost frozen falafel in the microwave or refrigerator.

– Reheat: We recommend warming cooked falafel in the microwave for 1 to 2 minutes maximum, or briefly in an air fryer or oven for a crisper result.
