A Taste of Ohio: The Ultimate BBQ Shredded Beef Sandwich
In my ongoing culinary journey to share more of the delicious food traditions from my home state of Ohio, I’m excited to present what I genuinely believe is one of THE BEST BBQ shredded beef sandwich recipes you’ll ever taste. This dish isn’t just a meal; it’s a nostalgic trip back to countless family gatherings, celebrations, and community events that shaped my youth.
Growing up in Ohio, shredded meat sandwiches were a staple at almost any festive occasion. Think weddings, graduation parties, birthday bashes – you name it, and you’d likely find platters laden with both Ohio Shredded Chicken Sandwiches and these incredible shredded BBQ beef sandwiches. They were more than just food; they were a comforting presence, a guaranteed hit that brought everyone together. Many families, like mine, would prepare these fillings from scratch, passing down cherished recipes. Others might source them from beloved local establishments, like Root’s Shredded Chicken, a place renowned for its expertise in all things shredded meat, beef included!
For this particular recipe, the star ingredient is a readily available boneless chuck roast. I simply cut this flavorful cut of beef into generous 2-inch chunks, creating ideal pieces for shredding. These beef pieces are then generously coated in a rich, savory brown sugar seasoning blend before being cooked to perfection. The beauty of this recipe lies in its adaptability: it can be masterfully prepared in either your trusty Instant Pot for a quicker turnaround, or in your slow cooker for maximum tenderness and minimal effort. The choice is yours, and both methods promise a deliciously satisfying result.
When it comes to BBQ sauce, don’t hesitate to use your personal favorite! The beauty of this recipe is its flexibility, allowing you to tailor the flavor profile to your preference. While I opted for the classic and widely loved Sweet Baby Ray’s for its balanced sweetness and tang, feel free to use a homemade Easy BBQ Sauce if you have one on hand, or any other brand that suits your taste buds. This flexibility ensures your BBQ shredded beef will always be exactly how you like it.
Essential Kitchen Tools for Perfect Shredded Beef
To make this recipe a breeze, here are a few recommended kitchen tools:
- Instant Pot Duo Electric Pressure Cooker: For quick and tender results.
- Instant Pot Silicone Lid: Handy for storage.
- Instant Pot 2-Pack Sealing Rings: Always good to have spares for different recipes.
- A reliable slow cooker, if that’s your preferred method.

Key Ingredients for Succulent Barbecue Beef
Creating truly delicious BBQ shredded beef requires a few simple yet essential ingredients:
- Boneless Chuck Roast: This cut of beef is ideal for slow cooking or pressure cooking as it becomes incredibly tender and easy to shred. Its marbling contributes significantly to the richness and flavor of the final dish.
- Homemade or Store-Bought Spice and Brown Sugar Mix: A blend of sweet and savory spices, with brown sugar as a key player, creates a fantastic crust and infuses the beef with depth. You can easily whip up your own mix or use a quality store-bought blend for convenience.
- Beef Stock: Essential for adding moisture and beefy flavor during the cooking process, ensuring the meat stays juicy and flavorful.
- Your Favorite BBQ Sauce: This is where you can truly personalize the recipe. Whether you prefer sweet, smoky, spicy, or tangy, choose a BBQ sauce that you love.
Each ingredient plays a crucial role in developing the deep, satisfying flavors characteristic of this classic comfort food. Opting for quality ingredients, especially your beef and BBQ sauce, will make all the difference in achieving a truly outstanding result.
Mastering the Method: Instant Pot vs. Slow Cooker
One of the best aspects of this BBQ shredded beef recipe is its flexibility in preparation. You can achieve fantastic results using either an Instant Pot or a traditional slow cooker. My personal preference leans towards the Instant Pot because it delivers a fully cooked, fall-apart tender meal in under 2 hours. As the beloved Ina Garten would say, “How easy is that?”
Instant Pot Method: Speed and Flavor Combined
For those short on time but unwilling to compromise on flavor, the Instant Pot is your best friend. Start by cubing your boneless chuck roast into roughly 2-inch pieces. Take a moment to trim any excess large fat pieces, which helps create a cleaner, more enjoyable shredded texture. Season the meat generously with your brown sugar spice blend, ensuring every chunk is well-coated. Place the seasoned beef into the Instant Pot, along with the beef stock, and let the magic happen. Pressure cook for approximately 50 minutes, followed by a natural release of pressure for a short period. This crucial step allows the beef to rest and continue tenderizing, resulting in incredibly succulent meat. Once the pressure is fully released, remove the beef and shred it with two forks – it should practically fall apart. Return the shredded beef to the pot, stir in your favorite BBQ sauce, and thin the mixture with some of the reserved beef stock to reach your desired consistency. The Instant Pot can even keep it warm for serving!
Slow Cooker Method: Effortless Perfection
If you prefer a more hands-off approach and have time to let flavors meld slowly, the slow cooker is an excellent choice. Begin by coating the entire piece of boneless chuck roast in your savory seasoning mix. Place the seasoned roast into the slow cooker, add the beef stock, then cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the meat is incredibly tender. Once cooked, transfer the beef to a cutting board, discard any large fat pieces, and shred thoroughly. Return the shredded beef to the slow cooker, pour in the BBQ sauce, and allow it to warm through for another 30 minutes to an hour. This extended simmering time in the sauce allows the flavors to truly penetrate the meat, resulting in a deeply rich and cohesive dish. Both methods promise incredibly tender and flavorful BBQ shredded beef, adaptable to your schedule and preferred kitchen appliance.

Expert Tips for the Best BBQ Shredded Beef
Achieving perfectly tender and flavorful BBQ shredded beef is simple with these helpful tips and tricks:
Opt for Boneless Cuts: While bone-in cuts can add flavor, a boneless chuck roast is undeniably easier to work with when your goal is perfectly shredded meat. Eliminating the need to navigate around bones streamlines the preparation process, making it much simpler to cut the beef into uniform chunks and remove any undesirable large fat pieces. This attention to detail ensures a consistent, melt-in-your-mouth texture in every bite.
Embrace Store-Bought BBQ Sauce: Don’t feel pressured to make BBQ sauce from scratch unless you truly want to! A high-quality store-bought BBQ sauce not only makes this dish incredibly easy and affordable to prepare but also guarantees you’ll get the exact flavor profile you and your family enjoy. There’s a vast array of options available, from smoky to sweet, tangy to spicy. My personal favorite, and a consistent winner for its balance and accessibility, is Sweet Baby Ray’s. Don’t be afraid to experiment to find your ideal match!
Optimize Flavor with Seasoning: Don’t just rely on the BBQ sauce for flavor. The initial spice rub with brown sugar, chili powder, garlic powder, onion powder, salt, and pepper is critical. It penetrates the meat as it cooks, building a deep, complex flavor from the inside out. Be generous with your seasoning and ensure all surfaces of the beef chunks are well-coated before cooking.
Achieve Perfect Shredding: The goal is fall-apart tender beef. After cooking, whether in an Instant Pot or slow cooker, the meat should be so tender that it easily pulls apart with two forks. If it resists, it might need a little more cooking time. For an even quicker shred, some people use a hand mixer directly in the pot, but forks work perfectly well and give you more control over the texture.
Freeze for Future Feasts: This BBQ shredded beef is an absolute lifesaver for meal prep and future easy dinners. It freezes beautifully, making it an excellent candidate for batch cooking. Simply allow the cooked and sauced beef to cool completely, then transfer it to a freezer-safe container or heavy-duty freezer bags. It will maintain its optimal freshness and flavor for up to 3 months in the freezer. When you’re ready to enjoy it again, simply let it defrost overnight in the refrigerator and reheat gently on the stovetop or in the microwave. If the mixture appears too thick after thawing and reheating, you can easily thin it out to your desired consistency by adding a splash more BBQ sauce or beef stock.
By incorporating these simple tips, you’ll consistently create BBQ shredded beef that is not only delicious but also incredibly convenient and versatile for any occasion.

Creative Ways to Serve Your BBQ Shredded Beef
The beauty of this BBQ shredded beef lies in its incredible versatility. While it’s undeniably a star as a sandwich filling, don’t limit yourself! Here are several delicious ways to enjoy this tender, saucy meat:
Classic Shredded Beef Sandwiches: This is arguably the most popular and satisfying way to enjoy BBQ shredded beef. Pile the warm, saucy meat high on a soft, fluffy bun. For the ultimate experience, pair it with crunchy, sweet and spicy bread and butter pickles and a generous dollop of creamy coleslaw. The combination of textures and flavors – tender beef, soft bun, crisp pickles, and cool slaw – creates an unparalleled comfort food experience that will transport you straight to an Ohio summer picnic.
Hearty Baked Potato Topping: Transform a simple baked potato (or “jacket potato” for our British friends!) into a complete and satisfying meal. Split open a hot, fluffy baked potato, fluff the insides with a fork, and top it generously with warm BBQ shredded beef. Add a sprinkle of shredded cheddar cheese, a dollop of sour cream, or some chopped green onions for an extra layer of flavor and texture. If you recall my BBQ Pulled Pork Stuffed Sweet Potatoes, this concept is wonderfully similar, simply swapping out the pork for our delicious beef for a different, yet equally delightful, twist.
Flavorful Salad Topping: For a lighter yet equally satisfying meal, use this BBQ shredded beef as a dynamic and protein-packed salad topping. Big, vibrant salads are a personal favorite for summer dinners, and I’m always seeking creative ways to switch up my protein options. This shredded beef offers a fantastic alternative to traditional grilled chicken or steak. Imagine it replacing steak in a Southwest Steak Salad, bringing a smoky, sweet, and savory element that perfectly complements fresh greens, corn, beans, and your favorite dressing.
BBQ Beef Tacos or Wraps: Spoon the shredded beef into warm tortillas or lettuce cups for a fun taco night. Add your favorite taco toppings like diced onions, cilantro, pickled jalapeños, or a squeeze of lime.
Loaded Nachos: Layer tortilla chips with BBQ shredded beef, cheese, and your favorite nacho toppings (salsa, sour cream, guacamole) for an epic appetizer or casual dinner.
BBQ Beef Pizza: Use the shredded beef as a topping for homemade pizza, perhaps with red onion, cilantro, and a blend of cheeses for a unique BBQ pizza experience.
No matter how you choose to serve it, this BBQ shredded beef is guaranteed to be a hit, offering endless possibilities for delicious and memorable meals.
Perfect Pairings: What to Serve Alongside
To complete your BBQ shredded beef meal, whether it’s piled high on sandwiches or enjoyed in other creative ways, a selection of classic sides can elevate the entire experience. When I serve my BBQ beef sandwiches, I love to accompany them with crunchy potato chips, creamy coleslaw, and those delightful bread and butter pickles. But if you’re looking to expand your side dish repertoire, consider these equally tasty options:
- Classic Macaroni Salad: A cool, creamy, and tangy macaroni salad is the quintessential side for any BBQ dish. Its comforting flavors and textures perfectly complement the rich beef.
- Refreshing Summer Pasta Salad: Light, bright, and full of fresh vegetables, a vibrant pasta salad offers a wonderful contrast to the hearty shredded beef, especially on warmer days.
- The Best Broccoli Salad: This sweet and savory salad, often featuring crisp broccoli florets, crumbled bacon, and a creamy dressing, adds a delightful crunch and a unique flavor dimension to your BBQ spread.
- Crispy French Fries or Sweet Potato Fries: A timeless favorite, hot and crispy fries are always a welcome addition alongside a BBQ sandwich.
- Corn on the Cob: Especially during summer, fresh corn on the cob, grilled or boiled and slathered with butter, is an undeniable classic.
- Baked Beans: A rich, sweet, and savory side that perfectly complements the BBQ flavors of the beef.
These sides are designed to enhance the overall meal, offering balance, variety, and a touch of traditional BBQ charm.
Frequently Asked Questions About BBQ Shredded Beef
Here are some common questions about making and serving this delicious BBQ shredded beef:
Can I make this in the slow cooker or the Instant Pot?
Absolutely! Both the slow cooker and the Instant Pot are excellent options for preparing this recipe, yielding tender, flavorful results. The Instant Pot offers a significantly faster cooking time, perfect for busy weeknights, while the slow cooker allows for a more hands-off, gradual cooking process that develops deep flavors. You can find detailed instructions for both methods within the complete recipe card below.
What is the best BBQ sauce to use for this recipe?
The “best” BBQ sauce is truly a matter of personal preference! I often use Sweet Baby Ray’s for its balanced sweet and tangy profile, which is widely popular. However, feel free to choose any BBQ sauce that you and your family enjoy. Whether it’s a smoky, spicy, extra sweet, or a homemade variety, the key is to use a sauce you love to ensure the final dish is exactly to your taste.
Can I use a different cut of beef?
While boneless chuck roast is highly recommended for its ideal fat marbling and ability to become incredibly tender and shreddable, you could also use other cuts suitable for slow cooking, such as beef brisket or round roast. Keep in mind that cooking times and the final texture might vary slightly depending on the cut you choose.
How do I know when the beef is fully cooked and ready to shred?
The beef is ready to shred when it is fork-tender. This means that if you insert a fork into a piece of beef and gently twist, the meat should easily pull apart without resistance. If it’s still tough, it needs more cooking time. This is especially important for the slow cooker method where tenderness develops over many hours.
Can I make this recipe spicier or milder?
Yes, absolutely! To increase the spice level, you can add a pinch of cayenne pepper or a dash of hot sauce to your spice blend or directly to the BBQ sauce. For a milder flavor, ensure your chosen BBQ sauce isn’t too spicy, and you can reduce the amount of chili powder in the initial seasoning mix.
How long does BBQ shredded beef last in the refrigerator?
When stored in an airtight container, leftover BBQ shredded beef will keep well in the refrigerator for 3-4 days. It’s fantastic for quick lunches or another easy dinner later in the week.

-
Shred the beef thoroughly using two forks and then add it back to the slow cooker crock. Add the BBQ sauce and stir to combine.

-
Serve on buns for delightful sandwiches.
Notes
Many recipes call for the pressure cooker to naturally release for a period of time because this helps the recipe cook just a little longer and allows the meat to rest and become more tender.
Since the pressure cooker will be slowly losing pressure, you do not have to do anything; it will eventually lose all its pressure, and the lid will unlock safely.
When a recipe calls for quick release, this means you will manually be letting the pressure out of the Instant Pot.
You will have to turn the vent to the “venting” position, and a bunch of hot steam will come out of the vent. It is very important that you do not put your hand in the path of the steam, as it is EXTREMELY HOT and can cause burns.
This process will then immediately unlock the lid, and the food can be served.
