Our adventure began with a tranquil arrival in the Finger Lakes. The region, famous for its eleven long, narrow lakes and rolling vineyards, immediately captivated us with its serene charm. The tour was incredibly fascinating. We learned how these specialized powders and concentrates are essential components in a vast array of everyday products, from nutritional supplements and sports drinks to baby formulas, baked goods, and even specialty cheeses. After our enlightening factory tour, and shedding our temporary “dairy chic” attire, we journeyed to the heart of dairy production: a working farm. The weather was a bit dreary and chilly, adding a touch of authentic farm atmosphere to our visit. We arrived at Patterson Farm, a remarkable sixth-generation dairy farm that has been in continuous operation since 1832. Its long history and dedication to dairy farming are palpable, telling a story of enduring tradition and adaptation.

Patterson Farm is home to over 1,000 cows, many of which contribute to the very milk processed at Cayuga Milk Ingredients. We explored their spacious cow barn, a highlight for me as I’ve always had a special affection for cows and dream of owning a couple someday (a secret I still keep from my husband!). It was reassuring to see the cows freely roaming within the barn, not confined to stalls, which speaks volumes about the farm’s commitment to animal welfare. We witnessed the efficient milking process, a testament to the blend of traditional farming values and modern technology.

A Special Moment with Baby Calves

After touring the main barn and milking facilities, the true highlight for many was our visit to the nursery where the baby calves resided. This was an experience that melted hearts! Despite the chilly conditions, spending an hour bottle-feeding these adorable calves was an absolute joy. Their soft fur, innocent eyes, and enthusiastic suckling made for an unforgettable interaction. We even posed by some tractors, a classic “city folks on a farm” moment, much to the amusement, I’m sure, of our country-savvy readers!

One quirky, yet utterly endearing, detail about baby calves is their lack of front teeth at birth. When they latch onto the bottle – or your hand, if you’re not careful – they create a gentle, suctioning pull. It might sound a bit odd, but there’s something wonderfully authentic about it, a genuine connection to farm life that you wouldn’t experience anywhere else. The warmth of their bodies and the gentle nuzzle against our hands were moments of pure farm magic.

With the baby calves well-fed and our hands (and clothes!) bearing the delightful scent of the farm, we returned to our hotel for a much-needed break. This included time for lunch and a refreshing shower – an essential step after an authentic farm visit! Rejuvenated, we then prepared for our evening’s grand finale: a cooking class at the esteemed New York Wine & Culinary Center. This state-of-the-art facility is a hub for food and wine education, perfectly situated in the heart of the Finger Lakes.

Under the expert guidance of Chef Jeffory McLean, we embarked on a culinary journey celebrating all things dairy. My best friend and I were tasked with creating an incredible cheese bowl. Yes, you read that right – a bowl made entirely out of cheese! It was a brilliant, innovative concept that left us utterly amazed. The process involved carefully shaping and baking cheese until it formed a sturdy, edible vessel, creating a visually stunning and incredibly flavorful serving dish.

We then filled our edible cheese bowls with perfectly spiced chicken, adding a rich, savory contrast to the creamy cheese. To complete this masterpiece, we topped it with a cool, tangy sour cream sauce, bringing all the flavors into perfect harmony. The class was a truly collaborative effort, with everyone working together at different stations to prepare various dishes, all featuring dairy as a star ingredient. It was a joyous experience of teamwork, learning, and shared laughter, culminating in a delicious dinner, perfectly paired with local Finger Lakes wine. The entire evening was a testament to the versatility and incredible flavors that dairy brings to the table, transforming simple ingredients into gourmet creations.
