Ingredients

  • 6 bone-in skin-on chicken thighs
  • 1 tablespoon plus 2 teaspoons salt-free Cajun seasoning, divided
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon cayenne pepper
  • 4 tablespoons olive oil, divided
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced yellow onion
  • 1/2 cup diced celery
  • 2 Andouille sausages, casing removed and diced small
  • 1 (15.5 ounce) can red kidney beans, drained and rinsed
  • 2 cups white long grain rice, rinsed
  • 4 cups chicken stock
  • Minced cilantro, optional

Instructions

  1. Preheat oven to 350 degrees F.
  2. Lay out your chicken thighs and season them generously with 1 tablespoon Cajun seasoning, along with your desired amount of kosher salt and cayenne pepper.
  3. In a large oven-safe skillet (a 3.5 quart Le Creuset braiser pan or a 12-inch cast iron skillet works perfectly), add 3 tablespoons of olive oil and heat over medium-high heat.
  4. Once the oil is hot, carefully add the seasoned chicken, skin side down. Cook until the skin is lightly golden and crisp, then flip the thighs and cook the bottom for just a few minutes to add a little color. This searing process should take approximately 10 minutes in total.
  5. Remove the chicken from the skillet and place it on a plate. Set aside while you prepare the rice mixture.
  6. Using the same skillet, add the remaining tablespoon of olive oil. Then, add the diced red bell pepper, green bell pepper, yellow onion, celery, and diced Andouille sausage.
  7. Sauté the vegetables and sausage for about 5 minutes, or until the vegetables have softened and the sausage has developed a slight color. Sprinkle with the remaining 2 teaspoons of Cajun seasoning, and season with kosher salt and cayenne pepper to your liking.
  8. Gently stir in the drained and rinsed red kidney beans, long-grain white rice, and chicken stock. Bring the entire mixture to a boil on the stovetop.
  9. Once boiling, carefully arrange the seared chicken thighs on top of the rice mixture in the skillet. Transfer the skillet to the preheated oven.
  10. Bake for approximately 35 minutes, or until the chicken is beautifully crisp on top and the rice is fully cooked and has absorbed the liquid. I recommend checking on the chicken around the 20-minute mark and adding more chicken stock if the rice appears too dry. For extra crispy chicken skin, you can turn on the broiler for a few minutes at the end, watching carefully to prevent burning.
  11. If desired, garnish the finished dish with fresh minced cilantro before serving.
