  • 1/2 cup white whole wheat flour
  • 1 teaspoon apple pie spice
  • 4 tablespoons unsalted butter, room temperature

For cake: 

  • 1-1/3 cup dark brown sugar
  • 1/3 cup melted butter
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon apple pie spice
  • 1 teaspoon vanilla bean paste
  • 1/4 teaspoon kosher salt
  • 2-1/2 cups white whole wheat flour
  • 1-1/2 cups finely shredded zucchini, water squeezed out

Directions:

For cinnamon sugar topping:
In a medium-sized mixing bowl, combine all ingredients for the topping. Using a pastry blender or your fingertips, blend the mixture until it resembles a coarse, sandy texture. Set aside.

For cake:
Preheat your oven to 325°F (160°C). Lightly spray a 9×13 inch baking pan with non-stick cooking spray to prevent sticking.

In a large mixing bowl, add all the cake ingredients (excluding the cinnamon sugar topping). Stir thoroughly until everything is well combined and the batter is smooth.

Pour approximately half of the cake batter into the prepared baking pan, spreading it evenly across the bottom. Sprinkle half of the reserved cinnamon sugar mixture generously over the batter.
