- 3 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- ¼ teaspoon red pepper flakes or more to taste, or one thinly sliced red chili
- 28 ounces (800 grams) whole canned peeled tomatoes (1 large can)
- 1 teaspoon salt or more to taste
- 4 tablespoons flat-leaf parsley, chopped
- 12 ounces (340 grams) penne pasta + 3 quarts/12 cups/3 Liters water and 1½ tablespoons/21 grams sea salt for cooking
- 2 plant-based sausages (optional – 3.2oz/90 grams each) + 1 tablespoon of olive oil, 1 clove of garlic, and 2 twists of black pepper for cooking
Instructions
MAKE THE ARRABBIATA SAUCE

Add 28 ounces of whole canned peeled tomatoes to a bowl. Rinse the can with 1 cup of water and add that to the bowl as well. Carefully chop the tomatoes into smaller pieces with kitchen scissors or crush them with your hands for a rustic texture.

Heat 3 tablespoons of extra virgin olive oil in a large skillet over medium-low heat. Add the 3 minced garlic cloves and ¼ teaspoon of red pepper flakes (or more if you prefer a spicier sauce). Sauté gently for 1 to 2 minutes, being careful not to burn the garlic, which can turn bitter.

Pour in the prepared tomatoes and add 1 teaspoon of salt. Bring the sauce to a gentle simmer over medium heat and let it cook for 15 to 20 minutes, stirring occasionally. Taste the sauce and adjust the seasoning with additional salt or chili if desired before combining it with the pasta.
ADD THE PASTA

While the sauce is simmering, cook 12 ounces of penne pasta in a large pot of salted boiling water according to package instructions, but reduce the cooking time by 1 minute to ensure it’s perfectly al dente. Before draining, reserve 1 cup of the starchy pasta cooking water. Drain the pasta thoroughly and add it directly to the arrabbiata sauce in the skillet.

Add 4 tablespoons of freshly chopped flat-leaf parsley and ½ cup of the reserved pasta water to the skillet. Continue cooking and tossing the pasta with the sauce for 1 minute more, or until the pasta reaches your desired al dente texture and the sauce perfectly coats each piece.
MAKE IT A MEAL WITH SAUSAGE (OPTIONAL)

While the arrabbiata sauce is simmering, prepare the optional plant-based sausage. Carefully peel 2 plant-based sausages and break them into small, bite-sized pieces. As you break them apart, gently apply pressure with your fingers to compact each piece, giving them a satisfying texture.

In a separate small skillet, heat 1 tablespoon of olive oil. Add the plant-based sausage bits, 1 crushed garlic clove, and 2 twists of black pepper. Sauté for approximately 5 minutes, or until the sausage pieces are beautifully browned and slightly crispy.
