They are incredibly rich in dietary fiber (around 12%) and protein (11–15%), making them excellent for digestive health and sustained energy. Naturally gluten-free, always check for certified gluten-free labels if you have dietary restrictions to avoid cross-contamination. They provide a robust, hearty base that absorbs flavors beautifully.
  • Nuts: We typically use a blend of almonds and walnuts for their complementary textures and health benefits. Almonds offer a satisfying crunch and are packed with vitamin E, magnesium, and healthy fats. Walnuts, known for their distinct earthy flavor, are an excellent source of omega-3 fatty acids, which are crucial for brain health.

  • Large mixing bowls: Two bowls—one medium for wet ingredients, one large for dry ingredients.
  • Whisk: For combining the wet ingredients.
  • Spatula or sturdy spoon: For mixing and pressing the granola.

How to Make Our Delicious Oil-Free Granola

  1. Preheat Your Oven and Prepare the Pan: Start by preheating your oven to 350°F (180°C). While the oven heats up, line a large baking sheet (we recommend a standard US 18×13-inch half-sheet pan) with parchment paper. This is crucial for easy removal and prevents your granola from sticking.

  2. Combine Wet Ingredients: In a medium-sized mixing bowl, combine the liquid components. Add your tahini, maple syrup, cinnamon, vanilla extract (if using), and a pinch of salt. Whisk these ingredients together thoroughly until you achieve a thick, smooth, and well-combined paste. This mixture will bind your granola and infuse it with rich flavor. Set this delicious paste aside.

  3. Prepare Dry Ingredients: If your nuts aren’t pre-chopped, coarsely chop them with a knife or, for a more rustic texture, simply crush them with your hands. Transfer your rolled oats, chopped nuts, and chosen seeds into a large mixing bowl. Give them a quick stir to ensure they are evenly distributed.

  1. Form the Granola Slab: Spread the granola mix evenly onto the prepared baking sheet. It should cover almost the entire surface of the tray. Now, here’s a crucial step for achieving those delightful clumps: flatten the mixture firmly with your spatula. Press it down to create one single, large, compact slab. This compression helps the ingredients stick together as they bake, forming bigger, crunchier clusters.

  2. First Bake & Stir: Bake the granola in your preheated oven at 350°F (180°C) for 15 minutes. After 15 minutes, carefully remove the tray from the oven. The granola won’t be fully crunchy yet. Using your spatula, gently break up the slab and stir the granola. This ensures even toasting. Then, redistribute it on the tray, pressing it down again to re-compact it into a single layer. This re-compacting step is vital for encouraging more clumps!

  3. Second Bake & Cool: Return the tray to the oven and bake for another 5 to 10 minutes, or until the granola turns a beautiful, light golden brown. Keep a close eye on it during this second phase, as nuts and seeds can brown quickly. Once golden, remove the granola from the oven and, here’s another critical step, let it cool down completely at room temperature for about 20-30 minutes. Your homemade granola won’t be crunchy right out of the oven; it will crisp up wonderfully as it cools.

  • Room Temperature Storage: We typically store our granola at room temperature in a sealed jar or any other airtight container. Stored this way, it remains perfectly crunchy for up to 3 weeks. In our home, however, it rarely lasts longer than a week because it’s so popular! We generally do not recommend refrigerating granola, as the moisture in the refrigerator can diminish its crispness.
  • Freezer Storage for Extended Freshness: For longer-term storage, allow the granola to cool down completely to room temperature. Then, transfer it into a freezer-friendly bag or an airtight freezer-safe container. It can be frozen for up to 6 months, maintaining its quality beautifully.
  • Thawing Instructions: When you’re ready to enjoy your frozen granola, simply let it defrost at room temperature for a few hours, or ideally, overnight. There’s no need to reheat; it will regain its perfect crunch as it thaws.

Instructions

  • STEP 1: Preheat oven to 350°F or 180°C. Line baking sheet with parchment paper.

    To a medium bowl, add ½ cup tahini, ⅓ cup maple syrup, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, and ¼ teaspoon salt. Mix well and set aside.

    Coarsely chop ½ cup almonds and ½ cup walnuts with a knife or crush them with your hands. To a large mixing bowl, add the nuts, 2 cups old-fashioned rolled oats, and 3 tablespoons mixed seeds.

    Pour in the tahini mixture. Stir and mix with a spatula until well combined.

  • STEP 2: Spread the granola mix onto the baking sheet, pressing it down with the spatula until you get one flat compact slab.

    Bake at 350°F or 180°C for 15 minutes; take it out, break it off and stir it with a spatula.

    Then press it down, recompact it and bake for 5 to 10 more minutes, until lightly golden brown.

  • STEP 3: Let cool down for 20 minutes. The granola won’t be crunchy right out of the oven, but it will crisp up as it cools down.

    Break it off with your hands and store it in a jar or airtight container to keep the crunch.

SUBSTITUTIONS

– Nuts: Substitute hazelnuts, pecans, cashews, macadamia nuts, peanuts, pistachios, and pine nuts for walnuts and almonds. To make it nut-free, substitute mixed seeds like pumpkin seeds and sunflower seeds for nuts.

– Seeds: We use chia, flax, and sunflower seeds but pepitas (pumpkin seeds), hemp seeds, and additional pumpkin seeds also work well.

– Tahini: Tahini is incredible in this recipe, and we highly recommend not replacing it for the best oil-free results. However, if you must, you can substitute smooth natural peanut butter for tahini (store-bought peanut butter often works best here). You can also use 1/3 cup of avocado oil, coconut oil, canola oil, sunflower oil, or extra virgin olive oil if you don’t mind adding oil.

– Maple syrup: Substitute agave syrup or honey for similar results.

– Aromas: Cinnamon is a classic, but you can also use grated nutmeg, ginger, pumpkin spice blend, allspice, or cloves for different flavor profiles.


MAKE AHEAD & STORAGE

– Make ahead: This healthy granola is the queen of make-ahead meals. It stays crunchy for weeks if you keep it in an airtight container.

– Room temperature: We keep this at room temperature in a sealed jar or airtight container for up to 3 weeks, although it never lasts more than one week in our home. The granola stays crunchy, no problem. We don’t recommend keeping it in the refrigerator as moisture can soften it.

– Freezer: To store the granola for longer, let it cool down completely, then transfer it into a freezer-friendly bag and freeze it for up to 6 months.

– Thaw: Let it defrost at room temperature for a few hours, or overnight, before eating it.
