High protein vegan breakfast ideas.

Since the inception of theplantbasedschool.com in 2019, Louise and I have dedicated countless hours to researching, developing, and testing hundreds of breakfast recipes. Our goal has always been to simplify plant-based eating, making it accessible, enjoyable, and packed with essential nutrients. These recipes represent the best of our culinary explorations, each one a testament to the versatility and incredible health benefits of a protein-rich vegan diet.

A high-protein breakfast is crucial for managing hunger, maintaining muscle mass, and providing a steady release of energy that can power you through your morning without the dreaded mid-morning slump. For vegans, it’s particularly important to be mindful of incorporating diverse protein sources to ensure a complete amino acid profile. These recipes showcase how easily and deliciously you can achieve that goal.

Essential Tips for a Protein-Packed Vegan Breakfast

To ensure your mornings are as robust and satisfying as possible, here are our favorite tips for crafting the perfect high-protein vegan breakfast:

  • Diversify Your Protein Sources: Aim to include a variety of protein-rich plant foods in your breakfast meals. Excellent choices include whole grains (like oats, quinoa), healthy fats (avocado, nuts, seeds), and legumes (tofu, tempeh, chickpeas, lentils, black beans). This diversity not only ensures you get a full spectrum of amino acids but also adds exciting flavors and textures to your plate.
  • Embrace Legumes and Tofu: For quick and hearty meals, explore tofu recipes. Tofu is incredibly versatile and absorbs flavors beautifully. Chickpea recipes are fantastic for adding fiber and a robust texture, keeping you full longer. Don’t forget lentil recipes, which are nutritional powerhouses known for their ability to promote satiety and provide sustained energy release.
  • Boost with Toppings and Spreads: Maximize your protein intake by pairing your breakfast with nutrient-dense additions. Think creamy nut butter, a generous sprinkle of various seeds (hemp, chia, flax, pumpkin), or a dollop of high-protein plant-based yogurt. These additions not only elevate the protein content but also add healthy fats and essential micronutrients.
  • Plan Ahead for Busy Mornings: Many of these recipes are perfect for meal prepping. Dedicate a small amount of time on a weekend to prepare components or entire meals that can be quickly assembled or reheated during the week. This strategy ensures you always have a healthy, protein-rich option even on the busiest days.

With these guidelines in mind, every single recipe in this roundup is specifically chosen for its significant plant-based protein content, helping to power your morning and set a positive tone for the rest of your day. We’ve gone the extra mile to include the estimated protein grams per serving and a quick, actionable tip to boost it even further.

PRO TIP: Pay attention to the protein grams per serving for each recipe and our additional suggestions to easily increase the protein content, customizing your meal to your exact needs.

Equipment

  • Non-stick pan (11 inches or 28cm)
  • Immersion hand blender (or standing blender)

Ingredients

For the Frittata Batter
  • 1 cup (130 grams) chickpea flour or garbanzo bean flour
  • 1 cup (240 grams) water
  • 2 tablespoons olive oil (plus 1 tbsp to cook it on the pan)
  • ½ teaspoon salt
  • 2 twists black pepper
  • ⅓ teaspoon kala namak or black salt (Optional, for an eggy flavor)
For the Zucchini Filling
  • 1 medium zucchini, cut into discs (plus ½ cup of water for cooking)
  • 1 medium red onion, thinly sliced
  • 1 pinch salt and pepper, to taste
Variation: Broccoli Filling
  • 9 ounces broccoli, chopped into small pieces (steamed or lightly boiled)
  • 1 tablespoon extra virgin olive oil
  • salt & pepper, to taste
Variation: Mushroom Filling
  • 7 ounces mushrooms (any variety), chopped
  • 2 ounces kale or spinach, chopped
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • salt & pepper, to taste

Instructions

  1. COOK THE VEGGIES

In a medium-sized pan, add ½ cup of water, 1 medium zucchini (cut into discs), and 1 medium red onion (thinly sliced). Cook on medium heat until the zucchini is tender and the water has evaporated, which typically takes about 5 to 10 minutes. Season the cooked vegetables well with a pinch of salt and pepper to enhance their flavor.

  2. MAKE THE BATTER

In a large bowl, combine 1 cup chickpea flour, 1 cup water, 2 tablespoons olive oil, ½ teaspoon salt, 2 twists of black pepper, and optionally ⅓ teaspoon kala namak for an authentic eggy flavor. Blend all ingredients using an immersion blender or a standing blender until you achieve a smooth, lump-free mixture. Once the batter is perfectly smooth, gently stir in the cooked zucchini and onion mixture, ensuring it’s evenly distributed.

  3. COOK IT IN A PAN

Heat 1½ tablespoons of olive oil in a clean non-stick pan over medium-low heat. Once the oil is shimmering, carefully pour the chickpea frittata batter mixture into the pan. Use a fork to gently arrange the vegetables in a single layer across the pan, preventing them from clumping in the center. Cook for 4 to 5 minutes without disturbing it, allowing the bottom to set and become golden brown. Before flipping, ensure the frittata is not sticking by gently rocking the pan back and forth. Carefully slide the frittata onto a large plate, then invert the pan over the plate and quickly flip it back into the pan to cook the other side. Cook for an additional two to three minutes, being careful not to overcook and dry it out. Once golden on both sides, slide it onto a plate, cut into wedges, and serve warm.

  4. OR COOK IT IN THE OVEN

Preheat your oven to 390°F (200°C). Prepare the batter with the zucchini as instructed in step 2, but adjust the proportions to 1.5 cups of water and 1.5 cups of chickpea flour for a slightly larger, oven-baked frittata. For an airier texture, you can optionally stir in 1 teaspoon of baking powder into the batter. Line the bottom of a 9×9 inch (24x24cm) cake pan with parchment paper and lightly oil the sides to prevent sticking. Pour the prepared batter into the cake pan, ensuring the veggies are evenly spread in a single layer. Bake for approximately 18 minutes, or until golden brown and firm to the touch. Remove from the oven, let it cool slightly, then take it out of the pan, cut into squares, and serve warm or at room temperature.
